Week 6--Recipe Share

Week 6 of Project Life Tuesdays hosted by The Mom Creative

I have been cooking more in the last few weeks than I have in my entire life. One of the things Matt and I committed to this year was to eat out less, eat home more, and save a ton of money in the process. My crock pot gets a major workout every week.

My picture this week is of a few of the cookbooks I have been using recently. I'm trying to cook meals more on the healthy side. I've made mac and cheese and an Alfredo that were both low fat and delicious! Our other new favorite is crock pot chicken tacos. Yum!


As March quickly approaches we will be mapping out our menu for the month. I would love any quick or easy recipes you would like to share! Almost every recipe I try has come by recommendation from a friend and they are always SO good! So let's share. :)

I'll go first.
Crock Pot Chicken Tacos

4-6 frozen chicken breasts
1 can of Rotel
1 package Taco seasoning

  • Put the frozen chicken in the bottom of your crock pot. Mix the rotel and taco seasoning in a small bowl and pour over the chicken. Cook on low about 6 hours.
  • When chicken is done remove from the crock pot and shred using two forks. Mix in some of the rotel left in the crock pot.
  • Fill your hard or soft taco shells with the chicken mixture and add your favorite toppings!
  • Enjoy!

So easy, right?

Cheesy Crock Pot Chicken Recipe

6 chicken breasts (boneless & skinless)

salt & pepper to taste

garlic powder, to taste

2 cans cream of chicken soup

1 can cheddar cheese soup



Rinse chicken and sprinkle with salt, pepper and garlic powder. Mix undiluted soup and pour over chicken in the crock pot. Cook on low 6 to 8 hours(or high 4hrs)
Serve over rice or noodles

Taste like campbells cheesy chicken & rice casserole. Can't wait to see what others post!

Is a crock pot the same as a slow cooker? I think we might need to invest in one this winter!

Okay here ya go. It is for a salad, but it is yummy.

Peas and Cheese Salad

* 1/3 cup Mayonnaise or Salad
Dressing
* 1/2 tsp Salt
* 1/2 tsp Prepared Mustard
* 1/4 tsp Sugar
* 1/8 tsp Pepper
* 1 pkg Frozen green Peas(10
oz)
* 1 c Mild Cheddar or Colby
cheese
* 1 medium Stalk celery thinly
sliced
* 3 Sweet Pickles (1/4 cup)
* 2 tbsp Onion finely chopped
* 2 Hard-cooked eggs, chopped


Thaw and drain peas. Dice cheese. Chop pickles. Mix mayo, salt mustard, sugar and pepper in large bowl. Add peas, cheese, celery, pickles and onion; toss. Stir in eggs. Cover and refrigerate for at least 1 hour or until chilled.

Baked Potato Soup

2/3 cup butter
2/3 cup flour
7 cups milk
4 potatos
4 green onions (optional)
bacon - around 10 pieces
1 1/4 cup shredded cheese
8 oz. sour cream
salt to taste
pepper to taste


1. Bake potatos and peel them
2. Melt butter, then gradually add flour & milk. I like mine a little thicker so I use a little more flour.
3. Dump in potatoes and bring to a boil.
4. Add in sour cream and cheese.
5. Add bacon, and salt and pepper to taste.

The chicken tacos were fantastic! We even had enough left over to make something tomorrow!

Here is my recipe for BBQ Meatloaf

2 lbs ground beef
1 pkg Chicken Stove Top Mix
1 cup water
2 eggs, beaten
1/2 cup BBQ sauce

In a bowl, mix the meat, stuffing mix, water, eggs, and 1/4 cup of BBQ sauce until just blended.

Shape into a loaf in a 13x9 baking dish.

Top with remaining BBQ sauce.

Bake 1hr in a 375 degree oven.

Rene'- Yes, crock pot/slow cooker, same thing! You definitely need to get one of these! I would say it's a MUST have appliance. :)
